Ingredients for Banana Oatmeal Pancakes

Step 1
Place the oats in a blender or food processor and pulse until they turn into a fine powder. Transfer the oat flour to a bowl and mix in the baking powder and cinnamon or gingerbread seasoning.

Step 2
In a separate bowl, beat the eggs or egg whites until they become frothy. Mix in the mashed banana and grated apple until well combined.

Step 3
Add the dry ingredients to the wet ingredients and mix until everything is well combined. Fold in the dried cranberries.

Step 4
Heat a non-stick skillet over medium-high heat and add a small amount of coconut oil or cooking spray to the pan.

Step 5
Using a ladle or spoon, pour a small amount of the pancake batter into the skillet to form a small pancake. Cook the pancake for about 2-3 minutes, or until bubbles start to form on the surface. Flip the pancake and cook for another 1-2 minutes.

Step 6
Repeat the process with the remaining batter, adding more coconut oil or cooking spray as needed.

Step 7
Serve the pancakes hot with your favorite toppings, such as fresh berries, sliced bananas, or maple syrup.

Chefs tip
"This recipe is a guideline and super simple to adjust to your liking. I added the apple and the cranberries for some extra texture, but these are not necessary to make it work. If you don't want to amp up the calorie count with maple syrup, try making a fresh raspberry or strawberry coulis. Add some frozen fruit to a small saucepan with a splash of water and let simmer for 5-10 minutes and then puree it with your weapon of choice."
