Chicken meatballs are versatile and convenient and can be enjoyed for lunch, dinner, or even as a snack. Meal-prepping chicken meatballs is an easy and efficient way to ensure that you have a healthy and delicious meal on hand when you're short on time. These chicken meatballs are made with ground chicken and various herbs and spices, making them not only tasty but also a great source of protein. They can be made ahead of time, refrigerated or frozen, and heated up in a matter of minutes. 

This recipe is perfect for those who want to plan and prepare their meals in advance, and are looking for a way to make mealtime less stressful and more enjoyable. This chicken recipe also offers a way to serve it with a lot of vegetables. You can pair it with your favorite sauce, vegetables, or grains. Also, remember that you can switch out the spices for any of your favorite flavorings. This recipe is more of a guideline and meant to show you that meal-prepping pays off and can be very easy as well. Now let's get cooking!

Step 1  
Preheat your oven to 200 degrees Celsius (390 Fahrenheit). And add all the meatball ingredients into a large bowl, and mix to combine. Put a sheet of baking paper on an oven tray and divide your mixture in balls (around 40-50 grams). Personally, I use an ice cream scoop to weigh out the balls (much faster than by hand). Bake the meatballs until golden brown in about 15-20 minutes depending on your oven.

Step 2
The meatballs are now ready to keep in your fridge or freezer, so we will now show you how you could serve them in a healthy way. In a bowl; mix your cauliflower rice with the herb-mixture and then spread it out on a baking sheet lined with a baking paper. Preheat your oven to 220 degrees Celsius (430 Fahrenheit).

Step 3
Finely chop your garlic cloves and add ⅓ to a small bowl, together with the yogurt and the chopped dill. Season with a bit of pepper and salt. Now combine your hot sauce, mango chutney and water in a small pan and simmer for 1 minute. This will act as a glaze for your chicken meatballs.

Step 4
Add the baking sheet with cauliflower rice to the preheated oven and bake for about 8 minutes. In the meantime, we are going to heat a wok or frying pan and sautée our mushrooms in 1 tbsp of neutral oil until golden brown. Add your spinach and the rest of the garlic and stir till the spinach is wilted.

Step 5
Serve the cauliflower rice and top it with the spinach/mushroom mixture. Add the (reheated) chicken meatballs to the plate and glaze with your spicy mango sauce. Serve the yogurt and dill sauce on the side and enjoy your meal!

Chefs tip: "The number of ingredients that go into the meatballs seems a bit daunting at first. If you don’t have a big pantry or you are a beginner chef, start off with a good seasoning mixture, panko bread crumbs and one fresh herb. The results are still amazing!"
